I’m getting more confident about baking. I wanted to something with half a bag of dark chocolate chips, so I decided to make some chocolate chip muffins. I found a couple of recipes that looked doable, and took the best elements of both to combine them in my recipe. I ended up with nearly perfect muffins–tender and moist.
- 2 cups flour
- 1/3 heaping cup of brown sugar
- 1/3 heaping cup of white sugar
- 3/4 tsp. salt
- 2 tsp. baking powder
- 1 cup chocolate chips (I actually do not recommend dark chocolate chips–they have a distinctly bitter, fruity note that just wasn’t for me)
- 1/2 cup chopped walnuts (optional)
- 2 eggs
- 1/2 cup veggie oil
- 1 tsp. vanilla
- 1/2 cup sour cream
- Preheat oven to 400 degrees and grease a standard muffin tin.
- In a large mixing bowl, stir together the flour, salt and baking powder
- In another bowl, lightly beat the eggs, then stir in the sugars, vanilla, oil and sour cream.
- Pour the egg mixture into the flour mixture. Stir to combine. Mixture should resemble a very thick batter.
- Stir in chocolate chips and walnuts, if using.
- Bake for 15-20 minutes.
- Let cool slightly before attempting to remove from muffin tin.
