After years and years and years of cooking for the fam, I’ve become a huge fan of finding recipes that save on money, time, or fuss. I’ve usually got time and funds to eat pretty well, but not everyone does. So meals that save time and money aren’t just fun novelties, they’re actually important, especially for busy/working people.

I love this recipe for Divorce Salad from Bon Appetit. It’s made nearly entirely with pantry and fridge staples and takes minutes to throw together. It’s also healthy, vegetarian, and delicious. Does it get any better? Nope!

It’s so simple: you marinate cannellini beans in a pungent vinaigrette and serve it over romaine lettuce, and top with fried onions. That’s it. That’s the recipe. Makes a perfect lunch or light dinner. Heck, you could put the leftover marinated beans in a food processor, top with the fried onions, and serve it as a dip with chips. In fact, I recommend eating this salad like chips and dip–just get in there and use your hands to pick up the lettuce use it to scoop up the beans.

If you don’t have shallots on hand, I think garlic or minced red onion would be great substitutes.
