Tenderloin Sandwich a la Indiana

This is a breaded pork tenderloin sandwich. Apparently it is considered an iconic Indiana food, but I’ve only encountered then in the northern part of the state. This is a showy specimen that was flattened by a machine, not by a human with a hammer.

For better or worse, Maryland’s state food is callinectes sapidus. Personally, I always thought picking them is too much work. Several years ago I kayaked through an small inlet where dozens of the things were resting on the bottom. Since then I’ve found it hard to avoid the words “Big sea bugs” when I think of them. Plus, if you are what you eat, crabs are dead fish and overripe chicken necks. They’re a beautiful color though. Leave ’em in the water to clean up the bits that are too big for the oysters say I.
