What Are Your Favorite One-Pot (or Skillet) Meals?
It’s always fun when I have back to back *victories* in the kitchen. A couple of nights ago I made a spectacularly flavorful one-skillet dish of Keilbasa sausage, sauerkraut and peppers and onions. I browned the sausages, then removed them from the heat, sauteed the peppers and onions in some olive oil and the scant sausage drippings. I then deglazed the pan with some chicken stock and beer, added the kraut to the pan, along with the sausage and let the whole thing simmer until much of the liquid had evaporated. The kraut adds so much flavor and tang, it’s just…wow. I served everything with a side of mashed potatoes. Thing I like about this dish is that’s meat and potatoes, sure, but you’re getting some nice veggie action in there, too, with the cabbage, peppers and onions.
My second kitchen victory came last night. I browned some fatty, bone-in, thick-cut pork chops in olive oil, then removed them from the heat. I sauteed a chopped and seeded chipotle pepper along with some of its sauce. I then deglazed the pan with some chicken stock, some dijon mustard and…this is going to sound weird to some of you…quality maple syrup. I let the sauce reduce until it formed a almost a glaze and let the pork chops finish cooking in it. Yes, I made a dijon-maple-chipotle glaze. It was delicious.
